DailyLift Gluten-Free Bhatura
A soft, puffy gluten-free bhatura made using Aarog DailyLift flour and yogurt. Perfect for pairing with chole, curries, or as an everyday treat — no maida needed.
Prep time: 20 mins|Cook time: 5 mins | Servings: 6-8

INGREDIENTS
1 cup Aarog DailyLift
¾ cup plain yogurt or Greek yogurt
Pinch of salt
½ tsp baking soda
Oil for deep-frying
Instructions
Prepare the dough
In a mixing bowl, combine DailyLift, salt, and baking soda.Add yogurt
Pour in the yogurt and mix until it comes together into a soft dough. If needed, add 1–2 tsp more yogurt to adjust texture.Rest the dough
Cover and let the dough rest for 20–25 minutes. This allows the flour to hydrate and improves texture.Shape
Divide the dough into small balls. Using a lightly oiled surface, roll each ball into a disc about 3–4 mm thick.Fry
Heat oil to medium-high. Gently slide a bhatura into the oil and press lightly — it should puff. Flip and fry until golden on both sides.
🍽️ Serving Suggestions
Serve hot with chickpea curry (chhole), yogurt, pickles, or chutney.
PRO TIPS
Oil temperature matters: too hot = browns without puffing; too cool = soggy.
Greek yogurt adds richness and helps puffiness.
Keep dough soft, not dry.
FAQ
1. Will these bhaturas really puff without gluten?
Yes. The combination of yogurt and baking soda helps create lift, while the fibre structure in DailyLift supports puffing when fried at the right temperature.
2. Can I use regular yogurt instead of Greek yogurt?
Yes. Both work well. Greek yogurt gives slightly thicker dough and may result in fluffier bhaturas.
3. Why didn’t my bhatura puff?
Common reasons:
Oil not hot enough
Rolled too thin
Dough too tight or too dry
Skipped resting time
Resting the dough for 20–25 minutes is important.
4. Can I bake or air-fry instead of deep frying?
Bhatura traditionally requires deep frying to puff properly. Baking or air-frying will produce a softer flatbread, but it may not puff fully.
5. Is DailyLift completely gluten-free?
DailyLift is made with gluten-free ingredients. The flours are mixed in a strictly gluten-free environment.
6. Can I prepare the dough in advance?
Yes. The dough can be refrigerated for up to 12 hours. Bring it to room temperature before rolling and frying.
7. Can I use this dough for puri instead?
Yes. Roll slightly smaller and slightly thinner for puri-style frying.
