High-Protein Red Lentil Pizza

INGREDIENTS
For the Base
1/2 cup Aarog Red Lentil Mix
1/2 cup water
Salt, to taste
1/2 tsp black pepper
For the Sauce
4 tbsp marinara sauce
1 tsp Italian seasoning
For the Toppings
1/4 cup sliced onions
1/4 cup sliced green pepper
1 tbsp corn
Pickled jalapeños, as desired
Fresh grated mozzarella cheese, as desired
Italian seasoning, for garnish
INSTRUCTIONS
1. Prepare the Lentil Pizza Base
In a mixing bowl, combine Aarog Red Lentil Mix, water, salt, and black pepper. Mix well until you get a smooth batter. Let the batter rest for 3–5 minutes so it thickens slightly.
2. Cook the Base
Heat a non-stick pan on medium heat. Lightly grease the pan if needed. Pour the batter into the pan and spread it into a round pizza base shape.
Cook for a few minutes on one side until the base starts to firm up and the bottom turns lightly golden. Carefully flip and cook the other side for another 2–3 minutes.
3. Add the Sauce
Spread marinara sauce evenly over the cooked lentil base. Sprinkle Italian seasoning on top of the sauce for extra flavour.
4. Add the Toppings
Top the pizza with sliced onions, green pepper, corn, pickled jalapeños, and freshly grated mozzarella cheese. Sprinkle a little more Italian seasoning on top.
5. Melt the Cheese
Cover the pan with a lid and cook on low to medium heat until the cheese melts and the toppings soften slightly. This should take about 4–6 minutes.
For a crispier finish, you can also transfer the pizza to an oven or air fryer for a few minutes until the cheese is bubbly and golden.
6. Serve
Slice and enjoy warm. Serve as a quick lunch, dinner, after-school snack, or healthy pizza-night option.
