This grain-free veggie sandwich is a wholesome, high-protein twist on a regular sandwich — made without bread. Instead of using traditional bread slices, this recipe uses Aarog mix as the base and turns it into a crispy, golden sandwich filled with colourful vegetables.

INGREDIENTS
For the Sandwich Base
1/2 cup Aarog mix
1/2 cup water
Salt, to taste
1/2 tsp black pepper
Oil or ghee, for greasing the sandwich maker
For the Veggie Filling
1 tbsp corn
2 tbsp chopped onions
2 tbsp chopped spinach
2 tbsp finely chopped cabbage
2 tbsp chopped bell peppers
Green chilli, finely chopped, optional
Fresh cilantro, optional
Extra seasoning, optional
INSTRUCTIONS
1. Prepare the Batter
In a mixing bowl, add Aarog mix, water, salt, and black pepper.
Mix well until you get a smooth, pourable batter. The consistency should be slightly thick, but still easy to spread. If needed, add 1–2 tbsp extra water to adjust.
Let the batter rest for 3–5 minutes.
2. Prepare the Vegetables
Finely chop onions, spinach, cabbage, and bell peppers.
Add corn and any optional ingredients like green chilli or cilantro. Mix the vegetables lightly and keep them ready.
3. Preheat the Sandwich Maker
Preheat your sandwich maker. Lightly grease both plates with oil or ghee so the sandwich cooks evenly and releases easily.
4. Add the First Layer
Pour a thin layer of Aarog batter onto the sandwich maker plate. Spread it gently so it covers the base.
5. Add the Veggie Filling
Add the chopped vegetables over the batter. Spread them evenly, but avoid overfilling so the sandwich can close properly.
6. Add the Top Layer
Pour another thin layer of batter over the vegetables to cover the filling.
Close the sandwich maker gently.
7. Cook Until Golden
Cook for 5–7 minutes, or until the sandwich is firm, crisp, and golden on the outside.
Cooking time may vary depending on your sandwich maker. Avoid opening too early, as the sandwich needs time to set.
8. Serve
Carefully remove the sandwich, cut into pieces, and serve hot.
Enjoy with mint yogurt dip, chutney, ketchup, hot sauce, pickle, or your favourite savoury dip.
